SHORT_DESC: Durella is an ancient and indigenous grape variety from the Veneto region. It is extremely vigorous, with a particularly thick and leathery skin, cultivated on soils rich in minerals. A variety typically found in the Lessini Mountains, it grows on the hills between the provinces of Vicenza and Verona; it is capable of creating wines with remarkable acidity due to the high content of malic acid, lending itself well to Metodo Classico sparkling wine.
OVERVIEW_VARIETAL: 100% Durella grapes
OVERVIEW_PROCESS: soft pressing occurs at a temperature between 10-12°C. The first fermentation takes place in thermo-controlled tanks, here, the temperature can range from 15-18°C. In May the wine then un-dergoes second fermentation using its own yeasts
OVERVIEW_SERVING_TEMP: ideally served at 4-6° C in a glass to enhance its persistent aromas

PROFILE_COLOR: Straw yellow tending towards golden yellow
PROFILE_NOSE: The nose is definitely evolved, pleasantly opening up with light notes of bread crust and toast, thereafter, ripe yellow fruit, hazelnut, dried fruit come through as well as the pleasant minerality typically found in wines of the area
PROFILE_FINISH: consistently bubbly, this is also noticeable in the glass, but it is not aggressive and carries great elegance. In the mouth it shows its full potential in every tasty, harmonious sip where citrus and dried fruit can be subtly detected
PAIRING: The pairings options with this wine are interesting, such as smoked salmon accompanied by buffalo mozzarella or a fish stew
