OVERVIEW_PROCESS: At the end of a slightly early harvest to preserve the necessary freshness, the bunches are subjected to a brief cryomaceration at a temperature of 8°C and then pressed very softly with brief contact with the skins. The free-run must is sent to ferment in stainless steel tanks at a controlled temperature. Regular decanting operations contribute to the aromatic and taste evolution of the product. After a few months of refinement in the bottle (2/3 months), the wine is perfect to express the pleasantness and drinkability that are the main characteristics of Aglianico rosé.
