Only the very best grapes from our vineyard in the Tramigna Valley are selected to give life to this wine. The selection of sparse grape bunches is laid out on large, traditional wooden trays, “graticci,” where they are left to dry until January, in order to favor the concentration of sugars & aromas. The aging in oak barrels, only a small part which are new, is ideal for making this prized wine mature to perfection.

Color: deep ruby red, with orange shades

Nose: intense & persistent, with scents of dried berries & spices

Flavor/Finish: soft, yet persistent flavor, with well-balanced tannins & a clean finish; notes of mocha, vanilla & raisin

Varietal: : 50% Corvina, 25% Rondinella, 20% Corvinone, 5% Oseleta

Food Pairing: roasted meat, furred & winged game, spicy cheeses.

Process: “Appassimento” drying for 90 days, vinification in stainless steel for 30 days, aged in 70% big French oak barrels & 30% in barrique for 30 months; bottle aged 8 months

Serving Temperature: 60 - 65 °F

Alcohol: 16.0%

Residual Sugar: 7.5 g/L

 

Awards:

With the traditional system of the Veronese pergola, the grapes of Valpolicella are produced. The vineyards are in conversion to organic, in which natural biological processes are favored for maximum grape quality & to better preserve nature.
