San Martino is the Superiore wine that the Cipriana winery has the pleasure and honor of producing. It is mediated by the poet Giosuè Carducci’s poem, famous all over the world for celebrating the harvest period that in the past was carried out in November. We have identified in an image representing the profile of the town of Castagneto Carducci, combined with the Viale dei Cipressi in Bolgheri
Color: intense ruby red
Nose: exceptional aromatic complexity, with black fruit aromas & spicy balsamic notes
Flavor/Finish: intense, with dense, velvety tannins enhanced by optimum acidity, giving freshness & longevity in the finish
Varietal: 75% Cabernet Sauvignon, 25% Petit Verdot
Food Pairing: roast venison, wild boar & game, steak florentine, well-aged hard cheeses
Process: fermentation in vats for two weeks, followed by 15 days of skin maceration; malolactic fermentation in 500 L vats; maturation in French oak barrels for at least 12 months, then in bottle
